The 2011 Brisbane Flood Menu

So we’re about to have a flood in Brisbane worse than that in 1974. Back then, my suburb was one among many to be inundated with water. Luckily for me, I’m up high enough that the water won’t reach. And thanks to my stay at mum’s I have an insane amount of food. To combat my frozen meat potentially defrosting should the power go out (and therefor my electric oven not working), I’m spending the afternoon cooking up some of it. Flood Food. Clinton-style.

Among the sausages and steaks were some very non traditional rice paper rolls using pork mince cooked in plum sauce, with chopped up bamboo shoot and water chestnut slices (pretty delicious) and two very tasty looking meat pizzas:

2 store bought pizza bases

Sauce for the base (I used some of the napoli sauce I had leftover from the Christmas hampers)

2 brown onions, diced (I’ve cooked mine with some sweet paprika for an extra flavour hit)

Shitake mushrooms (they were in a can, cooked briefly, figured I should add some extra vegetables)

about 300g of beef mince, browned

Packet of diced bacon, cooked

Olive mortadella (I got a luncheon meat style roll of it from Aldi while I was recovering from surgery, cut some up into little strips, and fried)

Shredded cheese

Herbs (I used a mix of dill tips, bolognaise sauce herbs, rosemary, dried bell pepper and parsley)

Put all the ingredients onto the pizza (I’ve done it in the order shown, expect the herbs were also put ontop of the sauce) and place in the over until the cheese goes golden brown.

Fridge is full, cupboards are full and I’ve got enough water to get me through, which is lucky because the bread, milk and water sections in just about every Coles looks like this:

    Last night I had a few colleagues round and made pizzas. One was Caramelised-Onion and Goats Cheese Pizza (http://pantone801.com/index.php/2010/03/caramelised-onion-and-goats-cheese-pizza/) and the other was made with a loin of pork roasted in Chinese spices and shredded on the pizza with rocket, peach slices and walnuts.

    Our supermarket also sold out of bread, so I am bakin my own at the moment.

    We also had a delivery this morning from Grays online of two cases of wine I ordered last week, so we have enough to drink.

      You’ve clearly got a nice stash of food on you than I do. I’ve been living off the gift vouchers I got from work, and just ended up buying an insane amount of mince (a leftover reaction from the beginning of last year when I was just getting back to working after 6 weeks of unemployment and needed cheap food to stretch out for many meals). Breadwise I have a loaf in the freezer and managed to get a loaf of white this morning. My supply of alcohol is a bottle of Pepperjack and Wild Turkey that I got from work.

      I love goats cheese. Will have to get some one day. My favourite pizza I’ve made so far would have to be the smoked salmon, pear, camembert and walnut pizza I made way back when.

        I am thinking of putting together a pizza recipe book. I will pick your brain about the Salmon one.

        We should meet up one day- we have food and a designer chair fetish in common. I was watching the junk floating down the river today keeping my eyes peeled for a Barcelona Chair or something.

        Oh I’d be more than happy to assist. I’d love a gourmet pizza recipe book. They’re some of the easiest, tastiest things you can make.

        I’m waiting for the looting to occur around Teneriffe. There’s a unit with a moooi horse lamp. I want.
